Mathis dates to 1887, when the railroad arrived and Thomas H. Mathis donated 300 acres for a townsite and a school. A second line, the San Antonio, Uvalde and Gulf, came in 1913. Cotton, corn and ranching supported the area, and winter vegetables became a crop from the 1930s. In the early 1950s another 7,000 acres two miles north of town were developed for vegetables. Damming the Nueces River in the 1930s created Lake Mathis, since renamed Lake Corpus Christi, which now draws visitors for recreation. The 2020 census counted 4,333 residents.
