Giddings was established in 1871 when the Houston and Texas Central Railway arrived, and its name likely honors Jabez Deming Giddings, who helped bring the line. Early settlers included a sizable minority of Wendish families from the Serbin area, and by 1890 the town was part of a rich cotton-growing area.
In the early 1980s the oil-laden Austin chalk beneath the town was tapped, and about 300 oil-related businesses located here before activity declined in the late 1980s. Current employers include Altman Plants, with 70 acres of greenhouses; Kaemark, which makes salon furnishings; the Giddings State School; and the Texas Department of Agriculture's seed laboratory. The city had 4,969 residents in 2020.
